City College Chefs Competition
City College Plymouth gave school pupils across the city the challenge to design a three-course meal suitable for athletes that included mackerel, chicken breast and forced rhubarb. These dishes not only had to show skill, but consideration of nutritional needs of athletes, which had a balance of flavour and texture throughout.
Our menu, with special thanks for their assistance to Simon Lovell (Coombe Dean Head Chef) and Peter Gorton (celebrity Chef) was as follows:
Starter: Cumin & Black Pepper Baked Mackerel on a Bed of Orange & Fennel Salad

Main: Sweet and Sour Chicken with Rice and Vegetables

Dessert: Rhubarb and Ginger Cheesecake
We worked well as a team throughout the competition, which was hosted in their training kitchens at the City College PL1 restaurant. It was a great opportunity which we all thoroughly enjoyed.
